There are positives and negatives to frying food.
Dietary fiber of potatoes increases when they are fried. Since frying happens over a shorter time due to high temperatures, fewer vitamins are leached compared to other cooking methods.
However, fried foods are fattening due to their high-calorie content. Another issue is that unstable cooking oils can go rancid and oxide at high heat. The free radicals have bad health consequences for our body.
So to gain the positives and avoid the negatives of fried food, we need to choose our cooking oils with care. The infographic from AuthorityDiet.com explains the type of oils you should use for cooking and deep-frying.
